Roots & Spores has completed its first oyster mushroom bucket harvest — a meaningful production milestone marking the transition from cultivation setup to active yield. This initial harvest confirms our substrate, environment, and cultivation protocols are operating as designed. Mushroom availability will be announced through the harvest list as additional cycles come online. Contact us or join the harvest list to be notified when mushrooms are available.
Following our first successful harvest, gourmet mushroom cultivation at Roots & Spores is actively expanding. Multiple oyster varieties are in production cycles, and additional specialty cultivars are in various stages of inoculation and colonization. We are building toward consistent, multi-variety availability for direct customers, harvest-list subscribers, and wholesale accounts. Specific variety availability is announced by harvest — not guaranteed continuously.
Our controlled-environment greenhouse is in active production. Hydroponic systems are running, microgreen production is underway, and specialty crop growing is in progress. We are working toward consistent specialty-crop supply for direct customers and wholesale accounts. Current crop availability varies — join the harvest list for advance notice of what's ready.
Work on our Vermont saffron enterprise is actively progressing. Site selection, corm sourcing, and production planning are underway as we build toward our first planting cycle. Saffron is a multi-year crop — commercial harvest requires established corm populations, and we are approaching this development deliberately. Saffron availability will be announced through Farm Updates as production readiness allows. Add your name to the saffron interest list to be notified.
Our small-scale farm-raised poultry program is actively developing. The Rainbow Egg Club flock is being established with a diverse selection of breeds chosen for egg variety and quality. Managed outdoor poultry areas are in development. Egg availability will be announced through Farm Updates and the harvest list when the flock is producing. We are currently accepting names for the Rainbow Egg Club interest list — sign up below to receive availability announcements.
Our on-farm honeybee colonies are established and under active management. Bees are active across the farm and surrounding landscape, supporting pollination for our crops and greenhouse production. Hive health and colony development are the current priority. Vermont farm honey is a developing product of this enterprise — availability will be announced through Farm Updates as production readiness allows.
