Our Approach

Precision in Every Grow

Mushroom cultivation is equal parts science and craft. At Roots & Spores, we manage temperature, humidity, airflow, substrate formulation, and inoculation timing with the same attention to detail we bring to every other enterprise on the farm.

We work with locally sourced hardwood, agricultural byproducts, and supplemented grain-based substrates tailored to each cultivar — because substrate quality is one of the primary drivers of mushroom flavor and yield.

We grow for quality and culinary relevance, not volume. Our mushrooms are harvested at peak maturity and handled carefully from fruiting room to customer.

Availability varies by harvest and is announced through our Farm Updates and harvest list. Not every variety is available at all times.

Blue Oyster

A culinary workhorse with firm texture, mild flavor, and striking blue-grey clusters. Versatile across almost any application.

Pearl Oyster

Delicately flavored and tender. One of the most widely recognized culinary mushrooms — excellent for sautéing, soups, and light preparations.

Black Oyster

Deeper in color and slightly more robust in flavor than pearl oyster. An elegant presentation on the plate.

Golden Oyster

Bright yellow color, delicate caps, and a subtle fruity quality when cooked. Visually striking for chefs.

King Oyster / King Trumpet

Thick, meaty stems and dense flesh that holds up well to high heat. A premium option for grilling, roasting, and charcuterie-style preparations.

King Blue Oyster

A robust, large-format oyster variety with pronounced flavor. Available on a harvest-dependent basis.

Lion's Mane

A distinctive specialty mushroom with a cascading white form and flavor reminiscent of seafood. Increasingly sought by chefs and health-conscious consumers.

Chestnut

Earthy, nutty, and slightly firm — excellent for slow-cooked dishes, mushroom stocks, and savory applications. One of our more underrated cultivars.

Shiitake

Rich umami, firm texture, and broad culinary utility. Our shiitake is grown on supplemented hardwood substrate for deep, developed flavor.

Black Poplar / Pioppino

Elegant slender stems and small caps with an earthy, slightly sweet profile. A specialty market favorite.

Wine Cap

A large outdoor-cultivated variety with a robust, earthy character. Grown on wood-chip beds as part of our regenerative outdoor production.

Morels

Morel cultivation is an active research area at Roots & Spores. Commercial-scale production is under development. Morels are not currently available for sale.

Truffle Cultivation

Truffle inoculation and orchard development are long-horizon research projects at Roots & Spores. Truffle cultivation is not a current commercial offering.
