Vermont's short growing season doesn't limit what we can produce. Our greenhouse extends the season, maintains quality, and allows us to grow crops that wouldn't survive outdoors.


Our Growing Infrastructure
Controlled-environment growing is central to how Roots & Spores operates. Our greenhouse infrastructure allows us to maintain consistent quality, manage light and temperature, and grow crops โ including ginger, turmeric, and microgreens โ that require more than Vermont's outdoor season can reliably provide.
We grow for culinary relevance and freshness. Microgreens are cut-to-order. Specialty crops are harvested at peak maturity and handled to preserve quality through delivery.
Our greenhouse also serves as a propagation hub โ allowing us to develop new varieties, extend our growing calendar, and supply starts for open-ground production.

Microgreens
Cut-to-order specialty blends and individual varieties including sunflower, pea shoot, radish, amaranth, and seasonal selections.
Lettuces
Specialty head and loose-leaf varieties selected for flavor, color, and market appeal.
Culinary Herbs
Basil, cilantro, thyme, oregano, chives, and specialty herb varieties grown for freshness and flavor density.
Specialty Aromatics
Seasonal and market-specific aromatics grown for culinary applications and direct market supply.
Ginger
Tropical rhizome grown in our controlled-environment greenhouse. Fresh ginger for culinary markets and direct customer supply.
Turmeric
Specialty rhizome crop grown alongside ginger. Fresh and dried applications for culinary and wellness markets.
Beets
Specialty and heirloom beet varieties for direct and wholesale markets.
Potatoes & Sweet Potatoes
Selected specialty varieties for local markets and restaurant accounts.
Tomatoes
Greenhouse and open-ground tomato production including heirloom and specialty varieties for direct and wholesale channels.
Seasonal Vegetables
Additional specialty and heirloom vegetable varieties selected seasonally for quality and market demand.
Hydroponic Production
We utilize hydroponic systems for select crops where water efficiency and year-round production are priorities.
Specialty Propagation
Greenhouse propagation of specialty transplants and developing crop varieties for on-farm and potential partner-farm supply.
