Saffron — Crocus sativus — is one of the world's most prized spices. Hand-harvested from the delicate stigmas of autumn-blooming crocuses, genuine saffron commands premium prices and is sought by chefs and specialty food buyers worldwide.

Domestic saffron production in the United States is exceptionally limited. Most saffron sold in the US is imported. Roots & Spores is building a Vermont saffron enterprise that serves a growing market demand for locally and domestically produced premium specialty crops.

Saffron cultivation requires patience. Corms (the underground planting structures from which saffron crocus grows) must establish over multiple seasons before commercial harvest becomes viable. Our development work is focused on establishing a productive, quality-driven growing operation.

What It Is

Saffron is the dried stigma of Crocus sativus, hand-harvested in small quantities each autumn. It is among the most labor-intensive crops in the world — and among the most valuable by weight.

Why Vermont

Crocus sativus responds well to cold winters and warm summer soils. Vermont's climate and soil conditions align with successful saffron cultivation, and domestic production of quality saffron remains extremely limited.
